Gnocchi alla Sorrentina Recipe

Looking to expand your knowledge of Italian Food? Consider some delicious, easy gnocchi from the Italian south like Gnocchi alla Sorrentina (sometimes just called “Gnocchi Sorrentina”).

This tomato and cheese-rich gnocchi pasta is a typical first course dish from the Campania region (where Naples is located), and “alla Sorrentina” means “Sorrento style.” Sorrento is south of the Amalfi Coast.

This dish is traditionally prepared with gnocchi made of potatoes, flour, and water, baked in a tomato sauce, and traditionally with Mozzarella, Parmesan, and basil. Once prepared, these gnocchi are baked in a small casserole pan or pot, which is then served piping hot!

Ingredients:

(Serves 4-6)

1 pound gnocchi

1 can peeled tomatoes OR 28 oz. of homemade tomato sauce

8 oz. of fresh Mozzarella

4 garlic cloves

Chopped or torn fresh basil

Grated Parmesan or Grana hard, aged cheese

Extra Virgin Olive Oil

Salt and Pepper

Preparation

Heat the olive oil and garlic in a pan until golden. Add the chopped canned tomatoes or tomato sauce, and cook for about 15 minutes on medium heat. Turn off the heat and add the basil.

In a boiling pot of salted water, cook the gnocchi until they rise to the surface. Remove the gnocchi from the water, and add them to the pan with the tomato sauce. Cube and add the Mozzarella and bake in a size-appropriate casserole pan or pot at 240 C (460 F) until all the cheese is melted. Plate to your quantity liking, and top with the grated aged cheese of your choice. Buon Appetito!
